Caesar Pasta Salad

A veggie friendly version of Caesar pasta salad with a homemade dressing. Feel free to swap for chicken and to add in some of those classic anchovies too.

Caesar Pasta Salad

Cook time: 30 minutes

Servings: 4

Ingredients

  • 150 g veggie chicken
  • 200 g pasta
  • 4 tbsp light mayo
  • 2 tbsp extra virgin olive oil
  • 0.5 piece lemon
  • 1 tsp dijon mustard
  • 1 piece garlic clove
  • 1 tsp capers
  • 0.5 tsp vegetarian Worcestershire sauce
  • 2 tbsp (veggie) parmesan cheese
  • 1 to taste salt
  • 1 to taste pepper
  • 2 small romaine lettuces
  • 1 large handful croutons
  • 1 to taste salt
  • 1 to taste pepper
  • 1 handful croutons
  • 1 extra (veggie) parmesan
  • 1 sprinkling black pepper

Instructions

  1. If not already cooked, prep veggie chicken according to packet instructions. Allow to cool and roughly chop.
  2. Cook pasta in salted water until al dente. Drain, rinse under cold water to cool, drain again.
  3. For the dressing whisk together mayo, olive oil, lemon juice, mustard, garlic, chopped capers, Worcestershire (if using), parmesan. Add a splash of water or two until a more pourable consistency. Season to taste with salt & pepper.
  4. In a large bowl add pasta, lettuce, veggie chicken and most of the croutons. Toss through with the dressing. Add a little extra salt & pepper as needed.
  5. Top with the remaining croutons, an extra sprinkling of parmesan & black pepper.
