Chipotle Salmon Tacos with Chili Lime Sauce

Ingredients

  • 1 lb salmon fillets
  • 1 tsp avocado oil
  • 0 salt
  • 0 black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chipotle powder
  • 0.5 tbsp chili lime seasoning
  • 2 cup green cabbage
  • 0.5 cup purple cabbage
  • 1 jalapeño diced
  • 0 cilantro
  • 3 tbsp mayonnaise
  • 4 tbsp Greek yogurt
  • 1 large lime juice
  • 0.5 tbsp chili lime seasoning
  • 0.5 tsp chipotle powder
  • 0 salt
  • 0 black pepper
  • 0.5 red onion thinly sliced
  • 1 lime juice
  • 0 salt
  • 2 large avocado
  • 1 garlic finely minced
  • 0.5 lime juice
  • 0 salt
  • 0 black pepper
  • 0.25 tsp cumin
  • 4 tortillas low-carb or preferred
  • 0 prepared slaw
  • 0 guacamole
  • 0 avocado sliced

Instructions

  1. Season the salmon by dabbing with a paper towel, drizzle with 1 tsp of avocado or olive oil. Season with a pinch of salt, pepper, 1 tsp paprika, 1 tsp garlic powder, 1 tsp chipotle powder, and 1/2 tbsp chili lime seasoning. Rub it in well. Cook in the oven or air fryer at 400F for 11-12 mins.
  2. Prepare the slaw by finely shredding 2 cups of green cabbage and 1/2 cup of purple cabbage. Add them to a bowl with 1 finely diced jalapeño pepper and a handful of chopped fresh cilantro.
  3. Make the dressing by combining 3 tbsp of mayo, 4 tbsp of Greek yogurt, the juice of 1 large lime, 1/2 tbsp of chili lime seasoning, 1/2 tsp chipotle powder, salt, and pepper in a mason jar. Shake well and taste. Pour half the dressing over the slaw and reserve the other half.
  4. Create pickled red onions by thinly slicing 1/2 red onion and covering them with the juice of 1 lime and a couple of generous pinches of salt.
  5. Make a simple guacamole by mashing 2 large avocados with 1 finely minced garlic clove, the juice of half a lime, a generous pinch of salt, pepper, and 1/4 tsp cumin.
  6. Char your favorite tortillas over the stovetop until lightly blackened and warm.
  7. Assemble your tacos by placing the tortilla on the base, then add a tablespoon or so of guac, 1-2 oz of flaked salmon, a few pickled onions, avocado slices, and drizzle with some of the reserved slaw dressing.
