Ingredients
- 1.5 cups White Rice uncooked
- 3 cups Water
- 1 Mango diced
- 0.5 Red Onion finely diced
- 0.25 cup Cilantro chopped
- 1 pound Shrimp peeled and deveined
- 2 tablespoons Olive Oil
- 0.5 cup Greek Yogurt
- 1 Jalapeno minced
- 2 tablespoons Lime Juice
Instructions
- Cook the rice according to the package instructions.
- Prepare the mango salsa by combining diced mango, red onion, and cilantro in a bowl.
