Summer Shrimp Bowls with Mango Salsa

Ingredients

  • 1.5 cups White Rice uncooked
  • 3 cups Water
  • 1 Mango diced
  • 0.5 Red Onion finely diced
  • 0.25 cup Cilantro chopped
  • 1 pound Shrimp peeled and deveined
  • 2 tablespoons Olive Oil
  • 0.5 cup Greek Yogurt
  • 1 Jalapeno minced
  • 2 tablespoons Lime Juice

Instructions

  1. Cook the rice according to the package instructions.
