Pumpkin Spice Cream Soda

This chilled cream soda combines pumpkin purée and warm spice with vanilla ice cream for a float-like texture, then finishes with whipped cream and a dusting of pumpkin spice. The soda is added at the end so the drink stays fizzy.

Pumpkin Spice Cream Soda

Servings: 4

Ingredients

  • 120 g pumpkin purée plain canned or cooked pumpkin, smooth
  • 60 ml heavy cream cold
  • 20 g granulated sugar for the whipped cream
  • 3 g pumpkin spice blend divided
  • 5 ml vanilla extract
  • 1 g fine salt
  • 240 g vanilla ice cream slightly softened
  • 240 g ice crushed or small cubes
  • 720 ml cream soda chilled
  • 80 g whipped cream for topping
  • 1 g pumpkin spice blend divided

Instructions

  1. Make the spiced base: in a medium bowl, whisk together the pumpkin purée, heavy cream, granulated sugar, 3 g pumpkin spice, vanilla extract, and fine salt until smooth and evenly combined. Divide the base evenly among the 4 tall glasses. The mixture looks fully smooth and evenly orange with no visible sugar grains.
  2. Add 60 g vanilla ice cream and 60 g ice to each glass. Each glass has a chilled, slushy base with ice cream beginning to soften at the edges.
  3. Pour 180 ml cream soda into each glass slowly down the side to keep the drink fizzy, then give each glass one gentle stir to combine. The soda foams lightly and the drink stays carbonated rather than flat.
  4. Top each glass with 20 g whipped cream and a light dusting of the remaining 1 g pumpkin spice. Serve immediately with a straw and a long spoon, if desired. The whipped cream sits on top and the aroma of pumpkin spice is noticeable as soon as the drink is served.
