Shallot + Apple Cheese Toasties
An elevated cheese toastie with sweet, sticky shallots and apple.

Ingredients
- 2 tbsp salted butter
- 1 tbsp olive oil
- 2 whole echalion shallots
- 0.25 whole apple
- 1 tbsp balsamic glaze
- 3 leaves fresh sage leaves
- 1 pinch salt
- 1 pinch black pepper
- 0.125 cup red wine
- 0.25 cup beef stock
- 3 tbsp salted butter
- 4 slices sourdough/ white bread
- 1 tsp salted butter
- 4 slices mozzarella
- 4 slices extra mature cheddar
- 1 tbsp water
Instructions
- In a frying pan on medium heat, add 2 tbsp butter and the olive oil.
- Follow with the chopped shallots and apple. Sweat down for 5 or so minutes, until all starting to soften.
- Then add balsamic glaze, chopped sage, salt and pepper, the red wine and beef stock and continue cooking on a low heat for 10 or so minutes until all caramelised + sticky and the liquid has evaporated.
- Remove from heat. Butter your bread on both sides and get a frying pan on medium-high heat.
- Add around 1 tsp of butter to oil the pan and add two slices of bread.
- Load up half of the shallots on each slice of bread followed by 2 slices of mozzarella and 2 slices of cheddar on each slice.
- Top the sandwiches with the second slice of buttered bread and cover with a lid. Fry for approx 2 minutes, until golden.
- Then flip and fry for a further couple of minutes with the lid on.
- This should be enough to melt the cheese but put around 1 tbsp water in the pan with the lid on as it will create steam which will help melt if needed.
