Apple Crumble Cheese Cake

Ingredients
- 5 apples
- 0.6666666666666666 cup brown sugar
- 1 tsp cinnamon
- 0.5 tsp pumpkin spice
- 4 tbs water
- 0.5 cup butter
- 4 tsp cornstarch
- 28 oz cream cheese
- 2 tsp vanilla extract
- 1.25 cup granulated sugar
- 1 cup Greek yogurt
- 4 eggs
- 2 tbs cornstarch
- 3 cups crushed gram crackers
- 5.2 oz butter
- 1 tbs granulated sugar
- 1 tsp cinnamon
- 1 pinch salt
- 0.5 cup oats
- 1 tsp cinnamon
- 1 pinch salt
- 0.75 cup flour
- 0.3333333333333333 cup brown sugar
- 3 oz melted butter
Instructions
- Prepare the apple filling by coring and slicing 5 apples.
- In a pan, combine the sliced apples, brown sugar, cinnamon, pumpkin spice, water, and butter. Cook until the apples are soft.
- Make a cornstarch slurry by mixing cornstarch with a little bit of water. Add this to the apple mixture to thicken it.
- For the cream cheese filling, combine room temperature cream cheese, vanilla extract, granulated sugar, Greek yogurt, eggs, and sifted cornstarch in a bowl.
- Prepare the crust by combining crushed gram crackers, butter, granulated sugar, cinnamon, and a pinch of salt.
- For the crumble topping, combine oats, cinnamon, a pinch of salt, flour, brown sugar, and melted butter.
