Spinach Artichoke Salmon

Ingredients

  • 4 6-oz. salmon fillets
  • 1 tsp. paprika
  • 1 tsp. dried thyme
  • 0.5 tsp. garlic powder
  • 0.5 cup shallots
  • 3 garlic cloves
  • 1 pinch crushed red pepper flakes
  • 1.25 cups dry orzo pasta
  • 2.5 cups vegetable broth
  • 2 tsp. Dijon mustard
  • 0.5 cup heavy cream or full-fat coconut milk
  • 2 handfuls fresh baby spinach
  • 1 12-oz. jar marinated artichoke hearts
  • 0.33 cup Parmesan or Pecorino Romano cheese
  • 2 Tbsp. nutritional yeast
  • 1 lemon

Instructions

  1. Season the salmon fillets with paprika, dried thyme, and garlic powder.
  2. Saute finely chopped shallots and garlic cloves with a pinch of crushed red pepper flakes.
  3. Cook the dry orzo pasta in vegetable broth until al dente.
  4. Stir in Dijon mustard and heavy cream or full-fat coconut milk.
  5. Add fresh baby spinach and marinated artichoke hearts to the pan and stir until the spinach is wilted.
  6. Sprinkle the mixture with grated Parmesan or Pecorino Romano cheese, or nutritional yeast if making dairy free.
  7. Finish the dish with the zest and juice of one lemon.
