Ingredients
- 3 tbsp unsalted butter
- 1 small onion
- 500 g chicken thigh fillets
- 2 garlic cloves
- 0.5 tsp garlic powder
- 0.5 tsp cooking salt
- 0.25 tsp black pepper
- 0.25 cup plain flour
- 2 cups chicken stock
- 3 cups milk
- 0.75 tsp cooking salt
- 0.25 tsp black pepper
- 300 g macaroni
- 1 large head broccoli
- 1.5 cups shredded cheese
- 25 g unsalted butter
- 0.5 cup panko breadcrumbs
- 2 tbsp parmesan cheese
- 1 pinch salt
Instructions
- Melt butter in a large dutch oven or oven-proof pot over high heat. Saute the onion for 2 minutes.
- Add chicken and garlic, sprinkle across garlic powder, salt, and pepper. Cook until the surface of the chicken is sealed.
- Stir in flour, then chicken stock – stir until it goes milky colored (indicates flour is dissolved).
- Stir in milk, salt, pepper, and macaroni.
- Scatter broccoli across the surface, bring to simmer, put lid on and transfer to oven preheated to 180C/350F (160C fan-forced).
- Bake for 20 minutes, remove lid, flick to oven grill/broiler on high.
- Stir in cheese (will seem watery still, that’s what we want), smooth surface.
- Mix melted butter, breadcrumbs, parmesan cheese, and a pinch of salt for the topping.
- Sprinkle with crunchy topping, put under grill for 3 minutes or until topping is golden.
- Serve and marvel at the creamy cheesy sauce!
