One Pot Lazy Lasagna Soup

Ingredients

  • 2 tbsp oil
  • 1 small yellow onion
  • 4 cloves fresh garlic
  • 2 tbsp tomato paste
  • 1 lb ground beef
  • 1 to taste salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika powder
  • 1 tsp all purpose seasoning
  • 0.5 tsp Italian seasoning
  • 0.33 cup water
  • 5 cups chicken broth
  • 1 cup marinara sauce
  • 5 sheets lasagna sheets
  • 1 cup heavy whipping cream
  • 0.5 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 0.5 cup Parmesan cheese
  • 0.5 tsp black pepper
  • 6 leaves fresh basil
  • 1 tbsp fresh parsley

Instructions

  1. In a pot, add oil. Add onion and sauté for 2-3 min until translucent.
  2. Add garlic and sauté for additional 1 min until fragrant.
  3. Add tomato paste and sauté for 1 min.
  4. Add ground beef along with seasonings, salt, pepper, garlic powder, smoked paprika powder, all purpose seasoning, Italian seasoning. Add water ,stir well and cook for 8-10 min on medium heat until the beef is fully cooked.
  5. Add in chicken broth and marinara sauce. Once it starts to boil, break lasagna sheets and add in the soup mixture. Cook for 8-10 min stirring occasionally until the pasta is al dente.
  6. Stir in heavy whipping cream, let it simmer for 2-3 min.
  7. In a bowl mix ricotta, mozzarella and Parmesan cheese along with pepper. Mix well to combine. Add cheese mixture in the soup and mix if you prefer thicker consistency or just ladle the soup into the serving bowl and top each bowl with a dollop of cheese mixture.
  8. Once the soup thickens to your desired consistency turn down the heat and serve warm.
  9. Garnish with parsley and fresh basil.
