- 0.25 tsp cinnamon pinch

- 0 pecans finely chopped, for garnish
- 0 carrot fresh, finely shredded, for garnish
Instructions
- Preheat the oven to 350°F. Line an 8x8-inch baking dish with parchment paper, letting it overhang for easy removal after baking.
- In a large mixing bowl, mash ripe bananas until smooth and creamy with only small lumps remaining.
- Add eggs, milk, Greek yogurt, honey or maple syrup, and vanilla extract to the mashed bananas. Whisk until combined and slightly frothy.
- Stir in the rolled oats, vanilla protein powder, baking powder, cinnamon, ginger, nutmeg, and a pinch of salt until just combined.
- Fold in the grated carrot and chopped nuts gently, distributing them evenly throughout the batter.
- Pour the mixture into the prepared baking dish. Tap gently on the counter to level the surface and release any air bubbles.
- Bake in the center of the oven until firm, golden on top, and a toothpick inserted in the center comes out clean, about 30–35 minutes.
- While the oats bake, make the topping. In a blender or food processor, combine cottage cheese, Greek yogurt, honey, vanilla extract, and a pinch of cinnamon. Blend until completely smooth and creamy.
- Let the baked oats cool in the pan for at least 15 minutes. Use the parchment to lift them out and transfer to a wire rack.
- Once cooled, slice the baked oats into equal portions using a sharp knife. For restaurant-style presentation, cut into neat squares or rectangles.
- Spoon or pipe a swirl of the blended cottage cheese-yogurt topping onto each piece. Garnish with a dusting of cinnamon, a sprinkle of finely chopped nuts, and freshly grated carrot for color.
- Serve warm or at room temperature. Store leftovers in an airtight container in the fridge for up to 4 days. Keep topping separate if prepping ahead, and add fresh before serving.
