Ingredients
- 180 ml Milk warmed to 100°F-110°F
- 8 g Instant Yeast
- 20 g Sugar
- 2 Egg room temperature
- 0.5 cup Greek Yogurt full-fat preferred
- 1 tsp Vanilla Extract
- 500 g All-Purpose Flour sifted for better crumb
- 8 g Salt fine sea salt preferred
- 60 g Butter melted and slightly cooled
- 500 g Chocolate Chips milk or dark, high-quality
- 0 All-Purpose Flour for dusting
- 0 Nutella about 1 tablespoon per bun
- 0 Parchment Paper
- 1 Egg Yolk
- 1 tbsp Milk
Instructions
- Combine the warm milk, instant yeast, and sugar in the bowl of a stand mixer. Let sit until foamy and fragrant.
- Add the eggs, Greek yogurt, vanilla extract, and flour to the foamy yeast mixture. Start mixing at low speed.
- Add the salt and begin mixing on medium speed. Watch for the dough to start coming together; it will be sticky but cohesive.
- With the mixer running, slowly drizzle in the melted butter. Continue mixing until the dough is glossy, elastic, and slightly sticky—about 12 minutes.
- Transfer the dough to a lightly greased bowl. Cover with plastic wrap or a damp towel and let rise in a warm, draft-free spot until doubled in size, about 1 hour.
- Turn the risen dough onto a lightly floured surface. Gently flatten to a rectangle and scatter the chocolate chips evenly over the surface.
- Fold and knead the dough gently to incorporate the chocolate chips evenly. Avoid overworking to prevent melting the chips.
- Divide the dough into 12 equal pieces using a kitchen scale for uniform buns. Shape each piece into a ball, then flatten slightly into a disk.
- Spoon a generous dollop of Nutella into the center of each disk. Gather the edges and pinch tightly to seal, then roll gently into smooth balls, seam side down.
- Arrange the stuffed buns on a parchment-lined baking tray, leaving space between them. Cover loosely and let rise 30 minutes until puffed.
- Preheat the oven to 350°F (175°C) with a rack in the center position.
- Whisk egg yolk with a splash of milk. Gently brush the tops of each bun with the mixture for a glossy, golden finish.
- Bake for about 18-22 minutes, until the buns are deep golden brown and sound hollow when tapped.
- Cool the buns for 10 minutes on the tray, then transfer to a wire rack. Serve warm and enjoy the molten Nutella center.
