- 0.25 tsp Nutmeg optional
- 1 tbsp Lemon Juice
- 1 tsp Vanilla Bean Paste
- 0 pinch Salt
- 0 Butter for greasing
- 1.25 cups All-Purpose Flour
- 0.25 cup Granulated Sugar
- 1.5 tsp Baking Powder
- 0.5 tsp Baking Soda
- 0.5 tsp Salt
- 6 tbsp Butter unsalted, cold, cubed
- 0.5 cup Buttermilk cold (or whole milk + 1 tsp vinegar)
- 0.5 tsp Vanilla Extract optional
- 1 tbsp Coarse Sugar
- 0 Lemon Zest to finish
- 0 Nutmeg freshly grated, to finish
- 0 Ice Cream vanilla, for serving (optional)
- 0 Whipping Cream lightly whipped, for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C) and set a rack to the center position.
- Prepare the peaches by scoring a shallow X on the bottom of each fruit, then blanch in boiling water for 30 seconds. Transfer immediately to ice water, then peel and slice.
- In a large saucepan, combine sliced peaches, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, vanilla bean paste, and a pinch of salt.
- Cook the peach mixture over medium heat for about 8–10 minutes, stirring frequently, until the juices thicken and the fruit is glossy but not mushy.
- Butter a 9x13-inch baking dish thoroughly, making sure to reach all corners.
- Pour the hot peach filling evenly into the prepared baking dish and let it cool slightly while you prepare the topping.
- In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt for the biscuit topping.
- Add cold, cubed butter to the dry ingredients. Cut it in using a pastry blender or your fingertips until the mixture resembles coarse crumbs with pea-sized pieces.
- Drizzle in cold buttermilk (or whole milk with vinegar) and vanilla extract. Stir gently with a fork until just combined; do not overmix.
- Use a large spoon or ice cream scoop to drop dollops of biscuit dough evenly over the peach filling, leaving small gaps for steam to escape.
- Sprinkle coarse sugar generously over the biscuit topping for crunch and shine.
- Bake the cobbler in the preheated oven for 30–40 minutes, or until the topping is deeply golden and filling is bubbling at the edges.
- Let the cobbler cool for 15–20 minutes before serving to allow the juices to set.
- For an elevated touch, zest fresh lemon and microplane a dusting of nutmeg over the cobbler just before serving.
- Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream for restaurant flair.
