Blueberry Muffin Cheesecake

Cook time: 130 minutes

Servings: 12

Ingredients

  • 0 butter for greasing pan
  • 0 parchment_paper for lining pan
  • 18 sheets graham_crackers crushed
  • 0.5 cup butter melted
  • 0.25 cup brown_sugar
  • 0.25 tsp salt
  • 32 oz cream_cheese softened
  • 4 egg large
  • 1 cup sugar
  • 0.5 cup sour_cream
  • 2 tsp vanilla_extract
  • 1 cup blueberries fresh or frozen
  • 1 tbsp sugar
  • 1 tbsp lemon_juice
  • 1 cup flour all-purpose
  • 0.25 cup brown_sugar
  • 4 tbsp butter melted
  • 1 tsp vanilla_extract
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven and prepare your pan by greasing and lining a 9-inch springform with parchment paper, wrapping the outside in foil to prevent leaks.
  2. Combine crushed graham crackers, melted butter, brown sugar, and salt in a medium bowl. Mix until the texture is like wet sand.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Use a flat-bottomed glass for a compact, even layer. Chill crust in the fridge while you prepare the filling.
  4. Beat the softened cream cheese with a hand mixer or stand mixer on medium speed until completely smooth and creamy, scraping the bowl as needed.
  5. Add eggs one at a time, mixing well after each addition. Scrape down the sides and bottom of the bowl between eggs.
  6. Add sugar, sour cream, and vanilla extract to the mixing bowl. Beat until the mixture is luxuriously smooth and homogenous, with no lumps remaining.
  7. Pour the cheesecake filling onto the chilled crust in the springform pan and smooth the top gently with a spatula.
  8. Prepare the blueberry topping by cooking blueberries, sugar, and lemon juice in a small skillet over medium heat until the berries release juices and mixture simmers. Stir for about two minutes, then lightly mash some berries with a fork. Let cool.
  9. In a small bowl, mix flour, brown sugar, melted butter, vanilla, and cinnamon with a fork until large, moist crumbs form for the crumble topping.
  10. Spoon the blueberry topping over the cheesecake filling in dollops, swirling gently with a knife for a marbled effect, or leave pockets of fruit for bursts of flavor.
  11. Sprinkle the crumble topping evenly over the cheesecake, focusing near the center for dramatic height and textural contrast.
  12. Bake at 325°F on the center rack for 30 minutes, then reduce heat to 250°F and continue baking for another 50 minutes, until the edges are set but the center still jiggles slightly.
  13. Turn off the oven and leave the cheesecake inside for 30 minutes with the door closed. Then crack the oven door and cool for an additional hour.
  14. Bring cheesecake to room temperature on the counter. Run a thin knife around the edge to release it from the pan, then refrigerate uncovered overnight.
  15. Release cheesecake from the springform pan. For sharp, clean slices, use a large sharp knife dipped in hot water and wiped dry between each cut. Serve chilled.
