Instructions

  1. Prepare all ingredients and garnishes: chop cilantro, slice lime, finely mince garlic, and grate ginger if using fresh.
  2. Bring chicken broth to a gentle simmer in a medium saucepan over medium heat.
  3. Add the minced garlic and grated ginger to the simmering broth. Let it infuse for several minutes until the broth becomes fragrant.
  4. Stir in soy sauce, sesame oil, rice wine vinegar, chili crisp, and freshly cracked black pepper.
  5. Add cooked chicken thighs to the broth. Shred or slice if desired. Let them warm through gently without boiling.
  6. Meanwhile, bring a separate pot of water to a boil. Add rice noodles and cook until just tender according to the package instructions. Drain and rinse under cold water.
  7. Divide drained rice noodles evenly between two deep serving bowls.
  8. Fill a small saucepan with water and bring to a gentle boil. Lower eggs in carefully and cook for 6½ to 7 minutes for jammy yolks. Transfer to an ice bath immediately.
  9. Peel the eggs gently under running water. Slice each in half lengthwise.
  10. Ladle hot broth and chicken over the noodles in each bowl.
  11. Garnish each bowl with a soft-boiled egg, fresh cilantro, a sprinkle of sesame seeds, and a generous squeeze of lime.
  12. Serve immediately, letting guests mix the garnishes into their steaming bowl for maximum flavor.
