Lemon Herb Grilled Chicken with Asparagus

An American-inspired side built around marinated grilled chicken and asparagus. The chicken is briefly marinated in lemon, garlic, and herbs, then grilled alongside asparagus until lightly charred and just tender, with the pan juices and a small lemon finish used to keep the flavors focused.

Lemon Herb Grilled Chicken with Asparagus

Ingredients

  • 30 ml lemon juice freshly squeezed
  • 2 g lemon zest finely grated
  • 20 ml olive oil
  • 10 g garlic minced
  • 8 g flat-leaf parsley chopped
  • 2 g fresh thyme leaves picked from stems
  • 4 g fine salt
  • 2 g black pepper freshly ground
  • 10 ml olive oil
  • 2 g fine salt
  • 1 g red pepper flakes
  • 450 g boneless skinless chicken thighs trimmed
  • 450 g asparagus woody ends trimmed

Instructions

  1. In a large bowl, whisk together the lemon juice, lemon zest, 20 ml of the olive oil, garlic, parsley, thyme, 4 g of the salt, and the black pepper. Add the chicken and turn to coat evenly. Let it sit while you prepare the asparagus, about 10 minutes at room temperature. The chicken is lightly coated and no longer looks dry on the surface.
  2. Preheat a grill or grill pan over medium-high heat. Toss the asparagus with the remaining 10 ml olive oil and the remaining 2 g salt. If using, add the red pepper flakes now. The asparagus is evenly glossy and seasoned.
  3. Grill the chicken for about 5 to 6 minutes per side, depending on thickness, until the exterior has clear grill marks and the internal temperature reaches 74 C in the thickest part. Move the chicken to a plate to rest. The chicken is browned and the center reads 74 C.
  4. While the chicken rests, grill the asparagus in a single layer for 3 to 5 minutes, turning once, until bright green with light char and tender-crisp stems. The asparagus bends slightly but still has bite at the stem.
  5. Slice the chicken if desired and arrange it with the asparagus. Spoon any resting juices over the top and serve immediately. The dish is hot, juicy, and ready to serve.
