Breakfast Fried Rice With Spicy Maple Drizzle
A hearty breakfast mash-up with Filipino fried rice vibes—loaded with eggs, chicken sausage, crispy tater tots, and a sweet-spicy maple drizzle that ties it all together.

Ingredients
- 1 lb chicken breakfast sausage
- 6 eggs
- 1 cup tater tots
- 0.5 bell pepper
- 3 cups day-old cooked rice
- 1 Tbsp soy sauce
- 1 pinch kosher salt
- 0.25 cup maple syrup
- 1 tsp hot sauce
Instructions
- In a skillet, cook sausage until fully browned. For bite-sized pieces, chop the links; for a more rustic mix, remove from casing and crumble as ground sausage. Set aside.
- In the same pan, scramble eggs to your preferred doneness. Remove and set aside.
- Fry tater tots until golden and crunchy, or air-fry at 420°F for 12 minutes.
- Add a little oil to the skillet. Sauté diced bell pepper with a pinch of salt until softened. Add day-old rice, breaking up clumps, and season with soy sauce. Stir-fry until hot and fragrant.
- Toss sausage, scrambled eggs, and crispy tots into the rice. Mix gently so everything stays fluffy and evenly distributed.
- Stir together maple syrup and hot sauce until smooth. Adjust heat to taste.
- Plate the fried rice, drizzle with spicy maple sauce, and enjoy a sweet-savory-spicy breakfast in every bite.
