Cranberry Lime Fizz

A chilled cranberry-lime mocktail mixed with fresh lime juice and simple syrup, then topped with soda water and served over ice. It pours ruby-red, tastes brisk and tart, and is intended for immediate serving.

Cranberry Lime Fizz

Ingredients

  • 50 g granulated sugar for simple syrup
  • 50 ml water for simple syrup
  • 20 ml simple syrup cooled
  • 240 ml cranberry juice chilled
  • 30 ml fresh lime juice from 1 to 2 limes
  • 240 g ice for serving
  • 240 ml soda water well chilled
  • 2 pieces lime wheel for garnish

Instructions

  1. Make the simple syrup: combine 50 g sugar and 50 ml water in a small saucepan. Warm over low heat, stirring, just until the sugar dissolves; do not boil. Cool fully, then measure out 20 ml for the drink. The syrup is clear, fully dissolved, and cool to room temperature.
  2. In a measuring cup or small pitcher, combine the cranberry juice, lime juice, and 20 ml simple syrup. Stir until evenly mixed. The mixture looks uniform and tastes sweet-tart when sampled with a spoon.
  3. Divide the ice between two tall glasses, about 120 g per glass. Each glass is about half full of ice.
  4. Divide the cranberry-lime mixture evenly between the two glasses, then top each with 120 ml soda water. The drink is fizzy and evenly ruby-colored from top to bottom.
  5. Garnish each glass with 1 lime wheel, if using, and serve immediately. The garnish is sitting on the rim or floating on the surface.
