Apple Streusel Coffee Cake
A square coffee cake with a buttery batter, a cinnamon-apple filling, and a brown sugar streusel topping.

Ingredients
- 0.6666666667 cup flour
- 0.5 cup brown sugar
- 1 teaspoon cinnamon
- 4 tablespoon butter softened
- 1.75 cup flour
- 6 tablespoon butter softened
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 0.3333333333 cup sugar
- 0.25 cup brown sugar
- 1 whole egg
- 1 teaspoon vanilla
- 0.75 cup buttermilk
- 0.75 cup brown sugar
- 0.25 cup flour
- 1.5 teaspoon cinnamon
- 1.5 cup apples diced and peeled
Instructions
- Make the streusel topping: In a small bowl, combine 2/3 cup of the flour, 1/2 cup of the brown sugar, and 1 teaspoon of the cinnamon. Add 4 tablespoons of the softened butter and use a fork to cut the butter into the dry ingredients until the mixture begins clumping together; set aside. Mixture begins clumping together.
- Make the batter: Add 1 3/4 cups of the flour, the baking powder, the baking soda, and the salt to a bowl; stir and set aside. Cream the remaining 6 tablespoons of butter with 1/3 cup of the sugar and 1/4 cup of the brown sugar for a couple minutes, or until light and fluffy. Add the egg and vanilla; stir well. Add about half of the dry ingredients and mix to combine. Add the buttermilk slowly; then add the remaining dry ingredients, stirring until just combined. Batter is just combined.
- Make the apple filling: Combine the remaining 1/2 cup of brown sugar, 1 1/2 tablespoons of flour, and 1 1/2 teaspoons of cinnamon in a bowl. Add the peeled and diced apples and stir until well-combined. Apples are well-combined with the filling mixture.
- Assemble and bake: Preheat oven to 350°F and grease or line an 8×8-inch or 9×9-inch square baking pan with parchment paper. Pour a little more than half of the batter into the prepared pan; spread to an even layer. Sprinkle the apples over the batter. Spoon the remaining batter over the apples and smooth it out. Top with the streusel topping, pressing it into the batter gently. Bake for about 30 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
