Miso-Glazed Salmon with Sesame Soba Noodles

Ingredients
- 2 tablespoons white miso paste
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 clove garlic minced
- 4 fillets salmon fillets
- 0 parchment paper
- 8 oz soba noodles
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame seeds
- 2 units green onions thinly sliced
- 0.5 units cucumber julienned
- 1 unit small carrot julienned
- 0 sesame seeds for garnish
- 0 green onions for garnish
Instructions
- In a small bowl, mix miso paste, soy sauce, honey, rice vinegar, sesame oil, and minced garlic until smooth.
- Brush the salmon fillets with the miso glaze and let them marinate for 15-20 minutes.
- Preheat the oven to 400°F (200°C). Place the marinated salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and caramelized on top.
- While the salmon is baking, cook soba noodles according to package instructions. Drain and rinse under cold water.
- In a large bowl, toss the cooked soba noodles with sesame oil, soy sauce, rice vinegar, sesame seeds, green onions, cucumber, and carrot.
- Serve the miso-glazed salmon over a bed of sesame soba noodles. Garnish with extra sesame seeds and green onions. Enjoy!
