Ingredients

  • 3 medium beets red or golden
  • 3 tablespoons olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 0 salt
  • 0 pepper
  • 4 cups mixed greens arugula, spinach, or baby kale
  • 2 whole oranges peeled and segmented
  • 1 whole grapefruit peeled and segmented
  • 0.25 whole red onion thinly sliced
  • 0.25 cup goat cheese crumbled
  • 0.25 cup pistachios roughly chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and roast for 45-60 minutes, or until tender. Allow to cool, then peel and slice.
  2. In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
  3. In a large salad bowl, arrange mixed greens, roasted beets, citrus segments, red onion, goat cheese, and pistachios.
