Pumpkin Spice Latte Cake
A delicious cake that combines the flavors of pumpkin spice and latte

Ingredients
- 0.5 cup unsalted butter
- 0.5 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 0.5 cup pumpkin puree
- 0.25 cup plain greek yogurt
- 1 cup whole milk
- 1.75 cup all purpose flour
- 1 tsp baking soda
- 0.5 tsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 0.25 tsp salt
- 2 shots espresso
- 2 tbsp maple syrup
- 8 oz soft cream cheese
- 8 tbsp soft unsalted butter
- 2 cups confectioners sugar
- 1 tsp vanilla extract
- 0.5 tsp cinnamon
Instructions
- Start by adding your butter to a small skillet on medium heat. Allow your butter to melt and brown stirring occasionally. This takes about 5-7 minutes. Once browned remove from the heat and allow to cool for 10 minutes.
- In a large bowl add your butter and sugar. Mix for 2 minutes before adding in your eggs and vanilla extract. Mix again for 2 minutes.
- Add your pumpkin puree, greek yogurt and milk to the mixture and mix until combined.
- Add your dry ingredients to the mixture and mix until all the dry bits are completely mixed in.
- Place your batter in a lined 9x11 baking dish and bake on 350F for 50-55 minutes.
- While your cake is baking make your coffee by combining 2 shots of espresso and 2 tbsp of maple syrup.
- Once your cake completely cools, poke holes in it and add your coffee. Allow this to seep into your cake.
- Add your butter and cream cheese to a stand mixer with a whisk attachment. Mix on high for 2 minutes before adding your confectioners sugar, milk and cinnamon. Mix on high for 2 minutes.
- Frost your cake with the prepared frosting and enjoy!
