Mint Mojito Mocktail
This non-alcoholic drink combines mint and lime for a mojito-inspired mocktail. The mint is gently muddled with lime and sugar syrup, then the drink is finished with soda water over plenty of ice for a crisp, lightly sweet result.

Ingredients
- 20 g fresh mint leaves picked over
- 120 ml fresh lime juice juiced
- 80 ml simple syrup ready to use
- 800 ml chilled soda water chilled
- 600 g ice cubes for serving
- 4 sprigs fresh mint sprigs for garnish
- 4 pieces lime wheels for garnish
Instructions
- Divide the mint leaves between the pitcher and the glasses by setting aside 4 small sprigs for garnish if using. Add the remaining mint leaves to the pitcher with the lime juice and simple syrup. Mint is lightly bruised and the mixture smells strongly of lime and mint.
- Muddle the mint gently for 10 to 15 seconds, just until fragrant. Do not shred it; over-muddling can make the drink bitter. The mint is visibly bruised and aromatic, with no torn pulp in the liquid.
- Add the soda water and stir once or twice to combine without flattening the bubbles. The mocktail looks evenly mixed and still fizzy.
- Fill 4 highball glasses with the ice cubes, then pour the mocktail evenly into the glasses. Each glass is full of ice and topped with an even, sparkling portion.
- Garnish each glass with a mint sprig and a lime wheel if using, then serve immediately. The drink is cold, fizzy, and ready to drink.
