Coconut Lime Sparkler
This drink combines coconut water, fresh lime, and sparkling water for a light, fizzy mocktail. A small amount of simple syrup rounds out the acidity, and mint plus lime slices keep the finish bright.

Ingredients
- 30 ml water for simple syrup
- 30 g granulated sugar for simple syrup
- 480 ml coconut water chilled
- 60 ml lime juice freshly squeezed
- 30 ml simple syrup see note in steps
- 1 g fine salt optional, for balancing sweetness
- 480 ml sparkling water chilled
- 400 g ice for serving
- 2 each lime thinly sliced for garnish
- 8 g fresh mint leaves lightly slapped
Instructions
- Make a quick simple syrup: combine 30 ml water and 30 g granulated sugar in a small saucepan over medium heat, stirring just until the sugar dissolves. Remove from the heat and cool briefly; you only need the syrup, not the saucepan contents afterward. The syrup is clear and no sugar grains remain.
- In a pitcher, combine 480 ml chilled coconut water, 60 ml fresh lime juice, and 30 ml simple syrup. If you want a sharper finish, add 1 g fine salt; it is optional. The mixture looks uniform and tastes balanced between tart and lightly sweet.
- Add the 480 ml chilled sparkling water and stir gently just once or twice to preserve the bubbles. The drink is evenly combined and still fizzy.
- Fill 4 tall glasses with 400 g ice. Divide the mocktail among them, then garnish each glass with lime slices and a little mint if using. Each glass is cold, fizzy, and visibly garnished.
