Garlic Butter Baked Fish Fillets
Baked fish fillets are coated with melted butter, garlic, lemon juice, and parsley, then roasted just until flaky. The sauce pools under the fish and is spooned back over the fillets before serving.

Ingredients
- 5 ml olive oil
- 45 g unsalted butter melted
- 10 ml olive oil
- 4 clove garlic cloves finely minced
- 30 ml lemon juice freshly squeezed
- 2 g lemon zest finely grated
- 5 g kosher salt
- 1 g black pepper freshly ground
- 1 g smoked paprika
- 680 g fish fillets patted dry
- 8 g fresh parsley finely chopped
- 60 g lemon slices for serving
Instructions
- Heat the oven to 220 C. Lightly oil a 23 cm x 33 cm rimmed baking sheet or shallow baking dish with 5 ml of the olive oil. The oven is fully preheated and the pan is lightly coated.
- In a small bowl, combine the melted butter, remaining 10 ml olive oil, minced garlic, lemon juice, lemon zest, salt, black pepper, and smoked paprika. The garlic butter mixture is uniform and aromatic.
- Arrange the fish fillets in a single layer in the prepared pan and spoon about two-thirds of the garlic butter mixture over the top. The fillets are evenly coated but not submerged.
- Bake for 10 to 14 minutes, depending on thickness, until the fish flakes easily with a fork and reaches an internal temperature of 63 C at the thickest point. The fish is opaque and flakes cleanly; the edges are just beginning to turn lightly golden.
- Spoon the remaining garlic butter sauce from the pan over the fish, then finish with the chopped parsley and optional lemon slices. The herbs are bright on top and the fish is ready to serve.
