Sweet & Spicy Honey Garlic Shrimp with Coconut Rice

Ingredients
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 0.5 teaspoon salt
- 0.25 cup honey
- 0.25 cup soy sauce
- 1 tablespoon sriracha or chili paste
- 1 tablespoon lime juice
- 1 teaspoon fresh ginger grated
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 lb large shrimp peeled and deveined
- 0 salt to taste
- 0 black pepper to taste
- 2 tablespoons green onions chopped
- 0 sesame seeds for garnish
Instructions
- In a medium saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and keep covered until ready to serve.
- In a small bowl, whisk together honey, soy sauce, sriracha (or chili paste), lime juice, and grated ginger. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
- Pour the honey garlic sauce over the shrimp. Cook for 2-3 more minutes, stirring occasionally, until the sauce thickens and coats the shrimp nicely.
- Serve the sweet and spicy honey garlic shrimp over a bed of coconut rice. Garnish with chopped green onions and sesame seeds for extra flavor and texture.
