Cajun Chicken & Sausage Pot Pie

Cook time: 60 minutes

Servings: 4

Ingredients

  • 0.5 medium onion
  • 2 celery stalks
  • 0.5 red & green bell pepper
  • 1 large russet potato
  • 10 oz andouille sausage
  • 1 whole rotisserie chicken
  • 4 tbsp butter
  • 2 tbsp flour
  • 3 cup chicken broth
  • 1.5 cup heavy cream
  • 1 cup frozen peas & carrots
  • 1 rosemary sprig
  • 2 thyme sprigs
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp cayenne pepper
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 2 tsp dried oregano
  • 1 pie crust or puff pastry
  • 1 egg wash

Instructions

  1. Dice half a medium onion, 2-3 celery stalks, and half a red and green bell pepper each.
  2. Cube one large russet potato and 8-10 oz andouille sausage.
  3. Shred one whole rotisserie chicken.
  4. In a large pot, melt 3-4 tbsp of butter. Add the diced onion, celery, bell peppers, and cubed potato and sausage. Cook until the vegetables are tender and the sausage is browned.
  5. Stir in 1-2 tbsp of flour until well combined with the vegetables and sausage.
  6. Gradually add 2-3 cups of chicken broth and 1-1 1/2 cups of heavy cream, stirring constantly. Bring the mixture to a simmer.
  7. Add the shredded chicken, 1 cup of frozen peas and carrots, 1 rosemary sprig, 2 thyme sprigs, and seasonings (1-2 tsp each of salt, black pepper, cayenne pepper, garlic powder, smoked paprika, and dried oregano). Stir well to combine.
  8. Cover the pot pie filling with a pie crust or puff pastry. Brush the top with an egg wash (1 egg + 1-2 tbsp water).
  9. Bake the pot pie in a preheated oven until the crust is golden brown and the filling is bubbly. Allow to cool before serving.
