Cajun Chicken & Sausage Pot Pie

Ingredients
- 0.5 medium onion
- 2 celery stalks
- 0.5 red & green bell pepper
- 1 large russet potato
- 10 oz andouille sausage
- 1 whole rotisserie chicken
- 4 tbsp butter
- 2 tbsp flour
- 3 cup chicken broth
- 1.5 cup heavy cream
- 1 cup frozen peas & carrots
- 1 rosemary sprig
- 2 thyme sprigs
- 2 tsp salt
- 2 tsp black pepper
- 2 tsp cayenne pepper
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 2 tsp dried oregano
- 1 pie crust or puff pastry
- 1 egg wash
Instructions
- Dice half a medium onion, 2-3 celery stalks, and half a red and green bell pepper each.
- Cube one large russet potato and 8-10 oz andouille sausage.
- Shred one whole rotisserie chicken.
- In a large pot, melt 3-4 tbsp of butter. Add the diced onion, celery, bell peppers, and cubed potato and sausage. Cook until the vegetables are tender and the sausage is browned.
- Stir in 1-2 tbsp of flour until well combined with the vegetables and sausage.
- Gradually add 2-3 cups of chicken broth and 1-1 1/2 cups of heavy cream, stirring constantly. Bring the mixture to a simmer.
- Add the shredded chicken, 1 cup of frozen peas and carrots, 1 rosemary sprig, 2 thyme sprigs, and seasonings (1-2 tsp each of salt, black pepper, cayenne pepper, garlic powder, smoked paprika, and dried oregano). Stir well to combine.
- Cover the pot pie filling with a pie crust or puff pastry. Brush the top with an egg wash (1 egg + 1-2 tbsp water).
- Bake the pot pie in a preheated oven until the crust is golden brown and the filling is bubbly. Allow to cool before serving.
