Creamy Garlic Alfredo Chicken Meatballs With Herby Mash
Juicy chicken meatballs in a garlicky Alfredo sauce, served with fluffy herby mash

Ingredients
- 500 g chicken mince
- 60 g breadcrumbs
- 25 g Parmesan, grated
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp adobo seasoning
- 1 tbsp garlic paste
- 1 tsp mixed herbs
- 1 tsp dried parsley
- 5 g fresh parsley, chopped
- 1 tbsp olive oil
- 3 cloves garlic cloves, chopped
- 300 ml double cream
- 20 g Parmesan, grated
- 1 tsp cream cheese
- 40 g spinach, washed
- 1 tsp adobo seasoning
- 1 tsp Italian herbs
- 800 g potatoes, peeled & chopped
- 40 g butter
- 50 ml warm milk (or cream)
- 1 tsp dried herbs or chopped parsley
- 1 to taste salt & pepper
Instructions
- Mix all meatball ingredients, roll into 12 balls (50g each). Fry in a little oil until golden, set aside.
- In the same pan, fry garlic for 1 min. Add cream, Parmesan, cream cheese, spinach, adobo & herbs. Simmer till slightly thick.
- Return meatballs to the pan, coat in sauce, simmer for 10 mins until cooked through.
- Boil potatoes for 15 mins, then drain. Mash with butter, milk, herbs, salt & pepper.
- Spoon mash onto plates, top with creamy meatballs & extra parsley/Parmesan.
