Creamy Garlic Alfredo Chicken Meatballs With Herby Mash

Ingredients

  • 500 g chicken mince
  • 60 g breadcrumbs
  • 25 g Parmesan, grated
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp adobo seasoning
  • 1 tbsp garlic paste
  • 1 tsp mixed herbs
  • 1 tsp dried parsley
  • 5 g fresh parsley, chopped
  • 1 tbsp olive oil
  • 3 cloves garlic cloves, chopped
  • 300 ml double cream
  • 20 g Parmesan, grated
  • 1 tsp cream cheese
  • 40 g spinach, washed
  • 1 tsp adobo seasoning
  • 1 tsp Italian herbs
  • 800 g potatoes, peeled & chopped
  • 40 g butter
  • 50 ml warm milk (or cream)
  • 1 tsp dried herbs or chopped parsley
  • 1 to taste salt & pepper

Instructions

  1. Mix all meatball ingredients, roll into 12 balls (50g each). Fry in a little oil until golden, set aside.
  2. In the same pan, fry garlic for 1 min. Add cream, Parmesan, cream cheese, spinach, adobo & herbs. Simmer till slightly thick.
  3. Return meatballs to the pan, coat in sauce, simmer for 10 mins until cooked through.
  4. Boil potatoes for 15 mins, then drain. Mash with butter, milk, herbs, salt & pepper.
  5. Spoon mash onto plates, top with creamy meatballs & extra parsley/Parmesan.
