Ingredients
- 30 ml water for simple syrup
- 30 g granulated sugar for simple syrup
- 300 ml cranberry juice chilled
- 45 ml fresh lemon juice from 1 to 2 lemons
- 30 ml simple syrup cooled
- 240 g ice for serving
- 240 ml sparkling water well chilled
- 4 slices lemon slices for garnish
Instructions
- Make the simple syrup if needed: combine 30 ml water and 30 g granulated sugar in a small saucepan. Heat over medium, stirring just until the sugar dissolves, about 2 to 3 minutes, then cool briefly. The syrup is clear and no sugar crystals remain.
- In a measuring jug, combine 300 ml cranberry juice, 45 ml fresh lemon juice, and 30 ml cooled simple syrup. Stir to mix. The mixture looks evenly blended and tastes tart-sweet.
- Divide 240 g ice between 2 glasses, then divide the cranberry-lemon mixture evenly over the ice. Each glass is about half full before the fizz is added.
- Top each glass with 120 ml sparkling water, then gently stir once or twice to combine without losing too much carbonation. The drink is lightly effervescent and uniformly pink-red.
- Garnish each glass with 2 lemon slices total and serve immediately. The drinks are cold, fizzy, and ready to drink.
