Ingredients
- 8 ounces ditalini pasta cooked al dente
- 1 tablespoons avocado oil
- 0 kosher salt (to taste) Source specifies seasoning to taste
- 8 ounces mild Italian ground sausage
- 0.5 cup sweet onion diced small
- 2 cloves garlic minced
- 1 tablespoons tomato paste
- 1 pinch kosher salt
- 1 pinch cracked black pepper
- 0 cracked black pepper (to taste) Source specifies seasoning to taste
- 0.5 cup low sodium chicken broth
- 0.75 cup heavy cream
- 0.5 cup parmesan cheese grated
Instructions
- Boil a pot of water, season it with kosher salt and cook the pasta according to the package. Al dente is best. Drain off the excess water using a colander, drizzle with avocado oil and set the pasta aside. Pasta is cooked al dente, drained, coated with oil, and set aside.
- Heat a sauté pan over medium high heat. Add the avocado oil. Once the oil is hot, add the mild Italian ground sausage. Sauté the sausage until it’s golden brown, then add the diced onion and minced garlic. Sauté until the onion is translucent. Sausage is browned and onion is translucent.
- Next, add the tomato paste and allow it to lightly caramelize in the pan for 2-3 minutes. Season everything with a pinch of kosher salt and a few turns cracked black pepper. Tomato paste has lightly caramelized, about 2-3 minutes.
- Next, deglaze the pan with low sodium chicken broth. Once the broth reduces by half, reduce the heat to medium/low and add the heavy cream. Stir well. Next, add the grated parmesan cheese. Once the cheese is melted, add the cooked pasta. Toss until everything is well coated in the sauce. If the sauce gets too thick, add a touch of broth to help loosen it. Sauce is creamy and the pasta is evenly coated.
