Autumn Berry Fizz

Servings: 4

Ingredients

  • 300 g mixed berries, fresh or thawed frozen rinsed if fresh; stems removed if needed
  • 30 ml honey measured fluid honey
  • 30 ml lemon juice freshly squeezed
  • 60 ml cold water for blending the berry base
  • 600 ml sparkling water well chilled
  • 480 g ice for serving
  • 120 ml sparkling water well chilled
  • 8 g mint leaves optional garnish

Instructions

  1. Add the berries, honey, lemon juice, and cold water to the blender. Blend until completely smooth, about 20 to 30 seconds. The mixture looks evenly blended with no large berry pieces remaining.
  2. Strain the blended berry base through a fine-mesh strainer into a large pitcher, pressing on the solids with a spoon if you want a smoother drink. Discard or reserve the pulp for another use. The pitcher contains a smooth berry concentrate with little or no pulp.
  3. Reserve 120 ml of the sparkling water, then divide the ice among 4 glasses. Add about 60 ml of the berry base to each glass, then top each with 150 ml of sparkling water and stir gently once or twice to combine without flattening the fizz. Each glass is bright red, chilled, and actively bubbling at the surface.
  4. Taste one glass and, if needed, add a small splash of the reserved sparkling water to the pitcher or individual glasses. Garnish with mint leaves if using and serve immediately. The drink is cold, fizzy, and balanced between berry sweetness and lemon tartness.
