Honey Mustard Glazed Salmon Bites
Cubed salmon is tossed in a honey-mustard glaze, baked just until flaky, and finished with lemon and herbs. The bites can be served warm over mixed greens or alongside other sides as a protein-forward side dish.

Ingredients
- 30 g Dijon mustard none
- 25 g honey none
- 10 ml olive oil divided
- 15 ml lemon juice freshly squeezed
- 2 cloves garlic finely grated
- 2 g smoked paprika none
- 2 g kosher salt divided
- 1 g black pepper freshly ground
- 450 g salmon fillet skin removed if present, cut into 3 cm bites
- 5 ml olive oil divided
- 2 g kosher salt divided
- 120 g mixed greens rinsed and dried
- 4 g fresh dill chopped, plus more for garnish
Instructions
- Heat the oven to 220 C. Line a rimmed baking sheet with parchment. In a small bowl, whisk together Dijon mustard, honey, 10 ml olive oil, lemon juice, grated garlic, smoked paprika, 2 g salt, and black pepper. The glaze is smooth and glossy.
- Pat the salmon dry and toss the bites with the glaze until evenly coated. Arrange them on the lined sheet in a single layer, leaving space between pieces. Drizzle the remaining 5 ml olive oil over the parchment or lightly over the fish, and sprinkle with the remaining 2 g salt. Each piece is coated and spaced apart on the tray.
- Bake for 10 to 12 minutes, until the salmon is opaque at the edges, flakes easily, and reaches 52 to 55 C in the center for moist, just-cooked salmon. If you want a slightly deeper glaze, broil for 30 to 60 seconds at the end, watching closely. The salmon flakes easily and the glaze looks set and lightly caramelized.
- Transfer the salmon bites to a serving platter over the mixed greens. Scatter with chopped dill if using, and serve immediately while warm. The platter is ready with warm salmon over fresh greens.
