One-Pan Ravioli With Sausage

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 pound sweet Italian sausage, casings removed
  • 18 ounces fresh or frozen cheese ravioli
  • 0.5 cup water
  • 0.25 teaspoon salt
  • 1 6-ounce bag baby spinach
  • 1 pinch salt
  • 1 pinch black pepper
  • 0.5 cup heavy cream
  • 0.5 cup grated parmesan cheese
  • 1 to taste salt
  • 1 to taste black pepper
  • 0.5 cup grated parmesan cheese
  • 1 few grinds black pepper

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the sausage and cook, breaking it up as you go, until browned, about 5 minutes.
  3. Stir in the ravioli, water, and salt. Reduce the heat to medium, cover, and cook until the ravioli are al dente, about 4 minutes.
  4. Add the spinach and a pinch each of salt and pepper, cover, and cook until the spinach is wilted, about 2 minutes.
  5. Add the cream and simmer, stirring occasionally, until it has reduced slightly and is starting to lightly coat the ravioli, about 2 minutes.
  6. Remove the skillet from the heat, stir in half of the parmesan, and season to taste with salt and pepper.
  7. Serve the ravioli topped with the remaining parmesan and a few grinds of pepper.
