Egg Roll In A Bowl
This egg roll in a bowl is everything you want in a weeknight dinner. It’s easy, filling, veggie-packed, and loved by everyone. It also makes amazing leftovers.

Ingredients
- 1 lb ground pork
- 1 Tbsp garlic
- 1 Tbsp grated ginger
- 2 tsp sesame oil
- 1 chopped yellow onion
- 1 optional minced jalapeño
- 16 oz coleslaw
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp hoisin
- 1 Tbsp rice vinegar
- 1 to taste green onions
- 1 to taste cilantro
- 1 to taste fresh basil
- 1 optional rice/cauli rice
Instructions
- Cook 1 lb ground pork (or turkey, chicken, beef, shrimp).
- Add 1 Tbsp garlic + 1 Tbsp grated ginger.
- Remove meat from pan.
- Add 2 tsp sesame oil, 1 chopped yellow onion, and minced jalapeño (optional). Cook for 4 mins.
- Toss in 1 (16 oz) bag coleslaw. Cook until wilted.
- Return meat to pan. Add 2 Tbsp low-sodium soy sauce, 1 Tbsp hoisin, 1 Tbsp rice vinegar.
- Top with green onions, cilantro, and fresh basil.
- Serve on its own or over rice/cauli rice.
