Sweet Potato Turkey Chili

Ingredients
- 0.5 piece yellow onion
- 1 piece red bell pepper
- 1 piece green bell pepper
- 1 piece jalapeño
- 4 piece garlic cloves
- 1 lb ground turkey
- 1 large piece sweet potato
- 2 tbsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- 0.5 tsp oregano
- 0.5 tsp salt
- 0.5 tsp fresh black pepper
- 1 can kidney beans
- 2 14.5 oz can diced or crushed tomatoes
- 1 8 oz can tomato sauce
- 1 cup chicken broth or water
- 0 to taste salt
- 0 to taste fresh black pepper
- 0 for topping cheese
- 0 for topping avocado
- 0 for topping tortilla chips
- 0 for topping cilantro
- 0 for topping greek yogurt
Instructions
- Heat a pot or Dutch oven with olive oil over medium high heat.
- Add the onion, bell peppers and jalapeño and cook, stirring occasionally, until slightly softened, about 5-6 minutes.
- Stir in the garlic and cook until fragrant, 1 to 2 minutes more.
- Move the vegetables to the side. Add the turkey and cook, breaking up with a wooden spoon, until cooked all the way through.
- Add sweet potato, spice mix, beans, diced tomatoes, tomato sauce and broth and stir together.
- Bring to a boil, then reduce to a simmer, stirring occasionally, until the potatoes are fork tender and the liquid has reduced to desired thickness, about 30 minutes.
- Season with additional salt and pepper to taste and serve with your favorite toppings!
