Sweet Potato Turkey Chili

Ingredients

  • 0.5 piece yellow onion
  • 1 piece red bell pepper
  • 1 piece green bell pepper
  • 1 piece jalapeño
  • 4 piece garlic cloves
  • 1 lb ground turkey
  • 1 large piece sweet potato
  • 2 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.5 tsp fresh black pepper
  • 1 can kidney beans
  • 2 14.5 oz can diced or crushed tomatoes
  • 1 8 oz can tomato sauce
  • 1 cup chicken broth or water
  • 0 to taste salt
  • 0 to taste fresh black pepper
  • 0 for topping cheese
  • 0 for topping avocado
  • 0 for topping tortilla chips
  • 0 for topping cilantro
  • 0 for topping greek yogurt

Instructions

  1. Heat a pot or Dutch oven with olive oil over medium high heat.
  2. Add the onion, bell peppers and jalapeño and cook, stirring occasionally, until slightly softened, about 5-6 minutes.
  3. Stir in the garlic and cook until fragrant, 1 to 2 minutes more.
  4. Move the vegetables to the side. Add the turkey and cook, breaking up with a wooden spoon, until cooked all the way through.
  5. Add sweet potato, spice mix, beans, diced tomatoes, tomato sauce and broth and stir together.
  6. Bring to a boil, then reduce to a simmer, stirring occasionally, until the potatoes are fork tender and the liquid has reduced to desired thickness, about 30 minutes.
  7. Season with additional salt and pepper to taste and serve with your favorite toppings!
