No-Bake White Chocolate Cheesecake With Blackberry Compote

Ingredients

  • 300 g biscuits
  • 130 g unsalted butter
  • 270 ml double cream
  • 500 g cream cheese
  • 300 g white chocolate
  • 100 g blackberries
  • 2 tbsp water
  • 3 tbsp sugar
  • 1 handful berries
  • 1 handful white chocolate shavings

Instructions

  1. Crush the biscuits into fine crumbs, mix with melted butter, and press firmly into an 8-inch tin. Chill while you make the filling.
  2. Whip the double cream until firm peaks form. Add the cream cheese, then stir in melted white chocolate (room temp). Mix until smooth and luscious.
  3. Spread the filling evenly over the base, leaving little nooks for the compote. Chill for at least 5 hours, or overnight for best results.
  4. In a pan, heat blackberries, water, and sugar over medium-high heat. Mash gently and simmer for 5 minutes until thickened. Let cool — it’ll firm up more off the heat.
  5. Spoon the blackberry compote all over your cheesecake and serve.
  6. Garnish with extra berries or white chocolate shavings for an extra touch of summer magic.
