No-Bake White Chocolate Cheesecake With Blackberry Compote

Ingredients
- 300 g biscuits
- 130 g unsalted butter
- 270 ml double cream
- 500 g cream cheese
- 300 g white chocolate
- 100 g blackberries
- 2 tbsp water
- 3 tbsp sugar
- 1 handful berries
- 1 handful white chocolate shavings
Instructions
- Crush the biscuits into fine crumbs, mix with melted butter, and press firmly into an 8-inch tin. Chill while you make the filling.
- Whip the double cream until firm peaks form. Add the cream cheese, then stir in melted white chocolate (room temp). Mix until smooth and luscious.
- Spread the filling evenly over the base, leaving little nooks for the compote. Chill for at least 5 hours, or overnight for best results.
- In a pan, heat blackberries, water, and sugar over medium-high heat. Mash gently and simmer for 5 minutes until thickened. Let cool — it’ll firm up more off the heat.
- Spoon the blackberry compote all over your cheesecake and serve.
- Garnish with extra berries or white chocolate shavings for an extra touch of summer magic.
