Pumpkin Pie Bars

Pumpkin Pie Bars

Ingredients

  • 0.5 cup pecan nut
  • 1 cup almond flour
  • 0.5 cup gluten-free all-purpose flour
  • 0.5 teaspoon cinnamon powder
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 teaspoon sea salt
  • 5 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 0.33 cup melted butter or ghee
  • 15 ounce natural pumpkin puree
  • 3 eggs
  • 0.25 cup natural maple syrup
  • 0.25 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon powder
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 teaspoon sea salt
  • 0.75 cup full-fat coconut milk
  • 1 tablespoon cornstarch or arrowroot starch

Instructions

  1. Preheat your oven to 350 F (180 C) and prepare an 8x8” square oven-safe mold.
  2. In a processor, place the pecans and grind until you have a fine powder. Add the rest of the crust ingredients and pulse until they are integrated and form a dough. You can also do it with your hands.
  3. Transfer the dough to the mold and press to cover the entire surface. Bake for 12 minutes.
  4. Meanwhile, prepare the filling by combining in a processor or blender all the ingredients. Blend until you have a smooth and silky consistency.
  5. Let the crust cool for a few minutes and then pour the filling over it. Bake for 45-50 minutes, until the surface is slightly golden, the edges firm and the center very slightly tender. Let it cool COMPLETELY before cutting into 9 bars and enjoying. Refrigerate for up to 8 hours for best results.
