Pumpkin Pie Bars
Gluten-free, refined sugar-free pumpkin pie bars. Perfect as a dessert or snack during the holiday season.

Ingredients
- 0.5 cup pecan nut
- 1 cup almond flour
- 0.5 cup gluten-free all-purpose flour
- 0.5 teaspoon cinnamon powder
- 0.5 teaspoon pumpkin pie spice
- 0.5 teaspoon sea salt
- 5 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 0.33 cup melted butter or ghee
- 15 ounce natural pumpkin puree
- 3 eggs
- 0.25 cup natural maple syrup
- 0.25 cup coconut sugar
- 1 teaspoon vanilla extract
- 0.5 teaspoon cinnamon powder
- 0.5 teaspoon pumpkin pie spice
- 0.5 teaspoon sea salt
- 0.75 cup full-fat coconut milk
- 1 tablespoon cornstarch or arrowroot starch
Instructions
- Preheat your oven to 350 F (180 C) and prepare an 8x8” square oven-safe mold.
- In a processor, place the pecans and grind until you have a fine powder. Add the rest of the crust ingredients and pulse until they are integrated and form a dough. You can also do it with your hands.
- Transfer the dough to the mold and press to cover the entire surface. Bake for 12 minutes.
- Meanwhile, prepare the filling by combining in a processor or blender all the ingredients. Blend until you have a smooth and silky consistency.
- Let the crust cool for a few minutes and then pour the filling over it. Bake for 45-50 minutes, until the surface is slightly golden, the edges firm and the center very slightly tender. Let it cool COMPLETELY before cutting into 9 bars and enjoying. Refrigerate for up to 8 hours for best results.
