Apple Crumble Cheesecake

Ingredients

  • 350 g Biscoff cookies
  • 150 g unsalted butter
  • 700 g cream cheese
  • 250 g Greek yogurt
  • 150 g granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 4 whole eggs
  • 4 whole medium apples
  • 95 g brown sugar
  • 2.5 teaspoons ground cinnamon
  • 0.5 g ground nutmeg
  • 15 ml water
  • 95 g all-purpose flour
  • 100 g brown sugar
  • 2.5 g ground cinnamon
  • 70 g unsalted butter
  • 150 g granulated sugar
  • 150 g heavy cream
  • 60 g unsalted butter
  • 0.5 teaspoon salt

Instructions

  1. Crush the Biscoff cookies into fine crumbs.
  2. Combine the crushed cookies with the melted butter to form the crust.
  3. In a separate bowl, mix together the cream cheese, Greek yogurt, granulated sugar, vanilla extract, ground cinnamon, and eggs to create the cheesecake filling.
  4. Prepare the apple filling by combining the sliced apples, brown sugar, ground cinnamon, ground nutmeg, and water.
  5. For the crumble topping, mix together the all-purpose flour, brown sugar, ground cinnamon, and melted butter.
  6. Prepare the salted caramel by heating the granulated sugar, heavy cream, unsalted butter, and salt.
