A delicious combination of apple crumble and cheesecake with a Biscoff cookie crust, apple filling, and a crumble topping. Finished with a drizzle of salted caramel.

Ingredients
- 350 g Biscoff cookies
- 150 g unsalted butter
- 700 g cream cheese
- 250 g Greek yogurt
- 150 g granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 4 whole eggs
- 4 whole medium apples
- 95 g brown sugar
- 2.5 teaspoons ground cinnamon
- 0.5 g ground nutmeg
- 15 ml water
- 95 g all-purpose flour
- 100 g brown sugar
- 2.5 g ground cinnamon
- 70 g unsalted butter
- 150 g granulated sugar
- 150 g heavy cream
- 60 g unsalted butter
- 0.5 teaspoon salt
Instructions
- Crush the Biscoff cookies into fine crumbs.
- Combine the crushed cookies with the melted butter to form the crust.
- In a separate bowl, mix together the cream cheese, Greek yogurt, granulated sugar, vanilla extract, ground cinnamon, and eggs to create the cheesecake filling.
- Prepare the apple filling by combining the sliced apples, brown sugar, ground cinnamon, ground nutmeg, and water.
- For the crumble topping, mix together the all-purpose flour, brown sugar, ground cinnamon, and melted butter.
- Prepare the salted caramel by heating the granulated sugar, heavy cream, unsalted butter, and salt.
