Vegetarian Easy Potato Quiche
A wholesome and satisfying vegetarian quiche with a smashed potato base, packed with protein from eggs and cheese, and nutrients from leeks, mushrooms, and spinach. A comforting dish for any meal.

Ingredients
- 5 potatoes
- 1 tsp olive oil
- 1 leek
- 1 cup mushrooms
- 1 handful spinach
- 1 tsp olive oil
- 1 to taste salt
- 1 to taste pepper
- 4 eggs
- 0.5 cup milk
- 0.25 cup cheddar cheese
- 1 to taste salt
- 1 to taste pepper
- 0.25 cup cheddar cheese
Instructions
- Preheat the oven to 390°F/200°C.
- Boil 5–6 medium to large potatoes until tender, which should take about 10–12 minutes, then drain.
- Sauté 1 sliced leek and 1 cup of sliced mushrooms in a little olive oil for 3–4 minutes until softened and lightly golden.
- Add a large handful of roughly chopped spinach and cook for 1 more minute until wilted.
- Smash the potatoes into a greased 9-inch baking dish, pressing gently to form a rough base. Drizzle lightly with olive oil and season with salt and pepper.
- Layer the sautéed vegetables evenly over the potatoes.
- Whisk 4 eggs and ½ cup of milk together, season with salt and pepper. Mix in ¼ cup of the grated cheddar cheese.
- Pour the egg mixture over the vegetables. Top with the remaining grated cheese.
- Bake for 25–30 minutes, until set and golden on top. Cool slightly before slicing and serving.
