Vegetarian Easy Potato Quiche

Vegetarian Easy Potato Quiche

Ingredients

  • 5 potatoes
  • 1 tsp olive oil
  • 1 leek
  • 1 cup mushrooms
  • 1 handful spinach
  • 1 tsp olive oil
  • 1 to taste salt
  • 1 to taste pepper
  • 4 eggs
  • 0.5 cup milk
  • 0.25 cup cheddar cheese
  • 1 to taste salt
  • 1 to taste pepper
  • 0.25 cup cheddar cheese

Instructions

  1. Preheat the oven to 390°F/200°C.
  2. Boil 5–6 medium to large potatoes until tender, which should take about 10–12 minutes, then drain.
  3. Sauté 1 sliced leek and 1 cup of sliced mushrooms in a little olive oil for 3–4 minutes until softened and lightly golden.
  4. Add a large handful of roughly chopped spinach and cook for 1 more minute until wilted.
  5. Smash the potatoes into a greased 9-inch baking dish, pressing gently to form a rough base. Drizzle lightly with olive oil and season with salt and pepper.
  6. Layer the sautéed vegetables evenly over the potatoes.
  7. Whisk 4 eggs and ½ cup of milk together, season with salt and pepper. Mix in ¼ cup of the grated cheddar cheese.
  8. Pour the egg mixture over the vegetables. Top with the remaining grated cheese.
  9. Bake for 25–30 minutes, until set and golden on top. Cool slightly before slicing and serving.
