Broccoli Cheddar Soup Pasta
Broccoli cheddar soup meets mac & cheese in this healthy(ish) creamy one-pot pasta. Just one pot and 30 minutes stand between you and dinner tonight.

Ingredients
- 0.5 lb small pasta shells
- 2 tbsp olive oil
- 0.25 cup diced onion
- 4 cloves garlic cloves, minced
- 2 cups broccoli florets
- 1 cup chicken broth
- 5 oz cottage cheese
- 0.5 cup heavy cream
- 1 cup cheddar, grated
- 1 cup mozzarella, grated
- 0.5 lb small pasta shells, cooked
- 0 mozzarella, grated
Instructions
- Bring a large pot of water to a boil and cook pasta until al dente.
- Add olive oil to a large sauté pan and cook onion until translucent.
- Add garlic and broccoli and cook until softened.
- Add chicken broth and simmer for 5-10 minutes until reduced a bit. Reduce heat.
- In a small blender or magic bullet, blend cottage cheese with cream until smooth.
- Add cottage cheese mixture to sauté pan, and stir to combine. Slowly add the cheddar and mozzarella; stirring until a thick cheese sauce forms.
- Add pasta and toss to coat. Serve in bowls topped with more mozzarella.
