Chicken Breakfast Sausages

Ingredients

  • 2 pounds ground chicken
  • 4 pieces boneless, skinless chicken thighs
  • 2 pounds ground turkey
  • 1 mix spices
  • 1 teaspoon red pepper flakes
  • 2 tablespoons maple syrup
  • 4 pieces eggs
  • 1 pile hash browns
  • 4 pieces English muffins
  • 4 pieces scrambled eggs
  • 1 sheet parchment paper
  • 1 sheet foil

Instructions

  1. Pick up a few pounds of ground chicken the next time you go shopping. Look for “ground chicken,” not “ground chicken breast.” The former is usually a blend of dark and white meat with more fat, which results in juicier sausages.
  2. If your store doesn’t have ground chicken, pulse a few quartered boneless, skinless chicken thighs in a food processor until finely minced.
  3. Alternatively, substitute ground turkey if ground chicken is not available.
  4. Add a mix of spices to the ground chicken for smokiness and an aromatic lift. Adjust the amount of red pepper flakes to match your heat preference.
  5. Add maple syrup to the mix. This provides a welcome bit of sweetness and helps the patties brown and develop a nice crispy crust in a cast-iron skillet.
  6. Form the mixture into patties and cook in a cast-iron skillet until browned and crispy.
  7. Serve the patties with runny fried eggs and a pile of hash browns for brunch.
  8. Alternatively, stack the patties onto English muffins with scrambled eggs, wrap in parchment paper and foil, and freeze for high-protein meal-prep breakfast sandwiches.
  9. Reheat the frozen sandwiches in your toaster or air fryer while you get ready for your day.
