Chicken Breakfast Sausages
Homemade chicken breakfast sausage patties with a mix of spices, smokiness, and a hint of sweetness from maple syrup. The patties are browned and developed a nice crispy crust in a cast-iron skillet.

Ingredients
- 2 pounds ground chicken
- 4 pieces boneless, skinless chicken thighs
- 2 pounds ground turkey
- 1 mix spices
- 1 teaspoon red pepper flakes
- 2 tablespoons maple syrup
- 4 pieces eggs
- 1 pile hash browns
- 4 pieces English muffins
- 4 pieces scrambled eggs
- 1 sheet parchment paper
- 1 sheet foil
Instructions
- Pick up a few pounds of ground chicken the next time you go shopping. Look for “ground chicken,” not “ground chicken breast.” The former is usually a blend of dark and white meat with more fat, which results in juicier sausages.
- If your store doesn’t have ground chicken, pulse a few quartered boneless, skinless chicken thighs in a food processor until finely minced.
- Alternatively, substitute ground turkey if ground chicken is not available.
- Add a mix of spices to the ground chicken for smokiness and an aromatic lift. Adjust the amount of red pepper flakes to match your heat preference.
- Add maple syrup to the mix. This provides a welcome bit of sweetness and helps the patties brown and develop a nice crispy crust in a cast-iron skillet.
- Form the mixture into patties and cook in a cast-iron skillet until browned and crispy.
- Serve the patties with runny fried eggs and a pile of hash browns for brunch.
- Alternatively, stack the patties onto English muffins with scrambled eggs, wrap in parchment paper and foil, and freeze for high-protein meal-prep breakfast sandwiches.
- Reheat the frozen sandwiches in your toaster or air fryer while you get ready for your day.
