Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon ground ginger
- 0.25 teaspoon ground nutmeg
- 0.25 teaspoon salt
- 0.75 cup buttermilk
- 0.5 cup canned pumpkin puree
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 2 tablespoons butter
- 0.5 cup crushed Biscoff cookies crumbled
- 1 to taste warm syrup
- 1 to taste butter
- 1 to taste Biscoff crumbles
Instructions
- Make the pancake mix by combining all-purpose flour, sugar, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and salt.
- Add buttermilk, canned pumpkin puree, large egg, melted butter, and vanilla extract to the pancake mix.
- Add butter to a medium hot pan.
- Pour out your pancakes onto the hot pan.
- Top the pancakes with crushed Biscoff cookies crumbled.
- Flip the pancakes over to cook the other side.
- Serve the pancakes with warm syrup, butter, and additional Biscoff crumbles.
