Honey Soy Glazed Salmon Bites

Bite-size salmon is coated in a honey-soy glaze, baked on a lined sheet pan, then briefly broiled after removing the parchment to deepen the color. The result is a glossy, warm side with tender centers and sticky, lightly caramelized edges.

Honey Soy Glazed Salmon Bites

Cook time: 13 minutes

Servings: 4

Ingredients

  • 45 g honey for the glaze
  • 30 ml soy sauce for the glaze
  • 15 ml rice vinegar for the glaze
  • 10 ml neutral oil for the glaze and pan
  • 2 cloves garlic cloves finely grated or minced
  • 5 g fresh ginger finely grated
  • 1 g black pepper ground
  • 450 g salmon fillet skin removed if needed, cut into 3 cm pieces
  • 2 g fine salt to season the salmon lightly
  • 5 ml neutral oil for the glaze and pan
  • 6 g toasted sesame seeds for garnish
  • 12 g scallions thinly sliced, for garnish

Instructions

  1. Heat the oven to 220°C. Line a rimmed baking sheet with parchment paper. The oven is fully preheated and the pan is lined.
  2. In a small bowl, whisk together the honey, soy sauce, rice vinegar, 10 ml of the oil, garlic, ginger, and black pepper until smooth. The glaze looks evenly emulsified and slightly thickened.
  3. Pat the salmon dry, season it lightly with the salt, and toss the pieces with the remaining 5 ml oil. Add the glaze and turn the salmon until each piece is coated. The salmon is glossy and evenly coated.
  4. Spread the salmon in a single layer on the prepared sheet, leaving a little space between pieces. Bake for 8 minutes. The salmon is just turning opaque at the edges.
  5. Remove the pan from the oven and lift off the parchment. Return the salmon pieces to the bare baking sheet or transfer them to a foil-lined sheet, spoon any glaze pooled on the pan over the salmon, then broil 1 to 2 minutes, watching closely, until the glaze is bubbling and lightly caramelized at the edges. If you prefer no broiling, bake 3 to 5 minutes more instead. The salmon flakes at the thickest piece and the glaze is sticky and lightly browned.
  6. Transfer to a serving plate and finish with the sesame seeds and scallions, if using. Serve warm as a side. The salmon is glossy, warm, and ready to serve.
