Apple Cider Braised Chuck Roast with Roasted Potatoes

Cook time: 270 minutes

Servings: 12

Ingredients

  • 1 cup apple cider
  • 0.5 cup low sodium soy sauce
  • 2 tb maple syrup
  • 2 tb Worcestershire sauce
  • 1 tb dijon mustard
  • 1 tsp ground black pepper
  • 3.5 lbs chuck roast
  • 0 salt
  • 0 pepper
  • 0 dutch oven
  • 2 pounds Yukon gold potatoes
  • 3 sprigs fresh rosemary

Instructions

  1. Preheat oven to 325°F.
  2. In a medium bowl, whisk together apple cider, low sodium soy sauce, maple syrup, Worcestershire sauce, dijon mustard, and ground black pepper to make the marinade.
  3. Pat dry the chuck roast and season both sides generously with salt and pepper.
  4. Place the chuck roast in a dutch oven.
  5. Pour the marinade on top of the chuck roast and flip the meat a few times to coat it well.
  6. Cover the dutch oven and place it in the oven for approximately 4 hours, depending on the thickness of your chuck roast.
  7. At the 3 1/2 hour mark, carefully nestle the halved or quartered Yukon gold potatoes around the chuck roast, submerging them in the liquid.
  8. Cover and return the dutch oven to the oven for 30 minutes more.
  9. Remove from the oven and carefully remove the lid. Let the steam go and remove the rosemary sprigs. Shred the meat using two forks. It should pull apart easily and the potatoes should be fork tender.
  10. If desired, place the pot back in the oven under the broiler (uncovered) on high for 3-4 minutes to brown the meat and potato edges for crispier bits. Spoon the rich apple cider cooking juices over everything and serve.
