Honey Mustard Glazed Salmon with Pomegranate Salsa

Ingredients
- 1 cup Pomegranate Arils
- 0.5 cup Cucumber diced
- 0.25 cup Parsley chopped freshly
- 0.25 cup Red Onion diced
- 1 tbsp Lime Juice
- 0 Salt
- 3 tbsp Dijon Mustard
- 2 tbsp Honey
- 1 tbsp Olive Oil
- 1 tsp Fresh Thyme
- 4 fillets Salmon Fillets 6 oz each
- 0 Parchment Paper
- 0 Pomegranate Salsa
Instructions
- In a bowl, combine 1 cup of pomegranate arils, 1/2 cup diced cucumber, 1/4 cup chopped fresh parsley, 1/4 cup diced red onion, 1 tbsp lime juice, and a pinch of salt. Chill in the fridge while preparing the salmon.
- In a small bowl, whisk together 3 tbsp Dijon mustard, 2 tbsp honey, 1 tbsp olive oil, and 1 tsp fresh thyme. Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and place the salmon fillets skin-side down. Brush the glaze generously over the fillets. Roast for 12-15 minutes, or until the salmon flakes easily with a fork.
- Plate the salmon and spoon the pomegranate salsa over the top for a burst of flavor and color.
