Ingredients
- 12 egg yolks
- 1.5 cups sugar
- 4 cups milk
- 4 cups heavy cream
- 1.25 teaspoons vanilla
- 1 teaspoon ground cinnamon
- 1 teaspoon fresh nutmeg
- 1 pinch ground clove
- 1 pinch ground allspice
Instructions
- Whisk the egg yolks and sugar until pale and silky.
- Warm the milk and heavy cream in a pot until steamy but not boiling.
- Slowly temper your hot milk into the egg mixture so it stays smooth.
- Pour everything back into the pot and cook on low heat, stirring nonstop until it thickens into glossy eggnog.
- Remove from heat and stir in the remaining vanilla, cinnamon, nutmeg, clove, and allspice.
- Chill it completely. It gets thicker as it cools, and the flavor gets deeper.
- Serve over ice with fresh nutmeg grated on top or hit it with your bourbon of choice if you’re feeling festive.
