Honey Butter Cornbread Cookies
These honey butter cornbread cookies are A+++ and the perfect little cozy sweet treat.

Ingredients
- 1 cup softened butter
- 2 eggs
- 0.5 cup brown sugar
- 0.25 cup sugar
- 3 tbs honey
- 1 tsp vanilla
- 1.5 cups flour
- 0.75 cups cornmeal
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cornstarch
- 0.5 tsp salt
- 1 stick softened butter
- 1 cup powdered sugar
- 1 splash vanilla
- 3 tbs honey
- 2 tbs heavy cream
- 1 pinch salt
- 1 additional honey
- 1 topping flakey sea salt
Instructions
- Whip together butter and eggs in a stand mixer. Add sugars, honey, and vanilla.
- In a separate bowl, whisk together dry ingredients. Gradually add to dry ingredients.
- Separate dough into 12 even balls and refrigerate at least 1 hour.
- Preheat oven to 350 degrees. Line two trays with parchment paper.
- Bake for 15ish minutes, rotating halfway through.
- Let cool completely before adding honey butter topping.
- In a separate bowl, whip softened butter. Sift in powdered sugar. Whip. Add in vanilla, heavy cream, honey, and salt. Whip some more and add additional powdered sugar if needed for consistency.
- Put in a ziplock bag and cut the tip to pipe.
- Top cookies with honey butter topping, additional honey, and flakey sea salt.
