Crispy Outside, Fluffy Inside, Easy Churros Bites

Ingredients
- 1 cup water
- 3 tbsp butter
- 2 tbsp sugar
- 0.25 tsp salt
- 1 cup all-purpose flour
- 2 whole eggs
- 1 sufficient for frying vegetable or canola oil
- 0.5 cup sugar
- 1 tsp cinnamon
- 0.5 cup milk
- 100 g chocolate
- 1 tbsp butter
- 1 tbsp sugar
Instructions
- In a saucepan combine water, butter, sugar, and salt. Bring to a boil.
- Add flour all at once and stir vigorously until the dough forms a ball and pulls away from the pot.
- Remove from heat and let cool 3–5 minutes.
- Add the 2 eggs, mixing until smooth, thick, and glossy.
- Transfer the dough into a piping bag fitted with a star nozzle.
- Heat oil to 350°F / 180°C. Pipe small 1-inch pieces into the oil, using scissors to cut. Fry until golden and crispy, about 2–3 minutes. Drain on paper towels.
- Mix sugar and cinnamon in a shallow bowl. Toss warm churros inside until fully coated.
- Heat milk gently (don’t boil). Pour over the chopped chocolate. Let sit 1 minute, then stir until smooth.
- Add 1 tbsp butter for shine. Add sugar if you want it sweeter or thicker.
- If too thin, return to the pot and simmer 1–2 minutes to thicken.
