Croissant Sausage & Apple Stuffing

Ingredients

  • 12 small croissants
  • 1 pound ground Italian sausage
  • 1 medium medium yellow onion
  • 1.5 cups celery
  • 1 cup carrots
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh chopped rosemary
  • 1 tablespoon fresh chopped sage
  • 0.5 teaspoon nutmeg
  • 2 cups diced apples
  • 0.33 cup dry white wine
  • 1 to taste chicken bouillon
  • 1 to taste salt
  • 1 to taste pepper
  • 2 large eggs
  • 0.5 cup chicken broth
  • 1 cup heavy whipping cream
  • 2 tablespoons melted butter
  • 1 to taste chicken bouillon
  • 1 for greasing butter

Instructions

  1. Get some croissants and rip them into 1 inch pieces until you have 8 cups worth. For reference, you can use 12 small croissants.
  2. Add the croissant pieces to a baking sheet and toast them in the oven at 350 degrees for 8 to 10 minutes (or until they’re crispy,) and set them aside.
  3. In a pan on medium heat, cook 1 pound of ground Italian sausage.
  4. Add 1 medium yellow onion (diced), 1.5 cups of finely diced celery, and 1 cup of diced carrots. Cook until the onions are soft.
  5. Add 1 tablespoon of minced garlic, 1 tablespoon of fresh chopped rosemary, 1 tablespoon of fresh chopped sage, 1/2 teaspoon of nutmeg, 2 cups of diced apples, 1/3 cup of dry white wine, and season with chicken bouillon, salt and pepper. Cook for about 2 more minutes and then set it aside to cool.
  6. In a large mixing bowl add 2 eggs, 1/2 cup of chicken broth, 1 cup of heavy whipping cream, 2 tablespoons of melted butter, and chicken bouillon. Whisk it all together until smooth.
  7. Add in your sausage mixture, and all of your croissant pieces. Mix it all together until well combined.
  8. Grease a 9 x 13 baking dish with butter, add in the stuffing, and press it all in.
  9. Bake covered at 375 degrees for 25 to 30 minutes, and then bake uncovered for another 10 to 15 minutes or until it’s golden brown.
