Rotisserie Chicken Caesar Salad Wrap

A delicious and easy-to-make wrap perfect for a quick lunch or dinner. This Chicken Caesar Salad Wrap combines the classic flavors of Caesar salad with the convenience of a wrap, featuring homemade Caesar dressing, crunchy Parmesan crisps, and tender rotisserie chicken.

Rotisserie Chicken Caesar Salad Wrap

Ingredients

  • 0.5 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons anchovy paste optional
  • 1 clove garlic minced
  • 0.25 cup Parmesan cheese freshly grated
  • 0 to taste salt
  • 0 to taste black pepper
  • 0.5 cup Parmesan cheese freshly grated
  • 0 parchment paper
  • 4 large flour tortillas
  • 0 to taste Caesar dressing
  • 2 cups romaine lettuce chopped
  • 2 cups rotisserie chicken shredded, skin removed
  • 0.5 cup cherry tomatoes halved, optional
  • 0.25 cup Parmesan cheese shaved
  • 1 avocado sliced, optional
  • 4 pieces Parmesan crisp
  • 0 for dipping Caesar dressing

Instructions

  1. In a medium bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, anchovy paste (if using), and minced garlic to make the Caesar dressing. Stir in the grated Parmesan cheese and season with salt and pepper to taste. If the dressing is too thick, add a little water or more lemon juice to reach your desired consistency.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place tablespoon-sized mounds of grated Parmesan cheese on the baking sheet, spacing them a few inches apart. Flatten each mound slightly with the back of a spoon. Bake for 5-7 minutes, or until the Parmesan is golden and crisp. Let them cool completely on the baking sheet before removing with a spatula.
  3. Lay a tortilla flat on a clean surface. Spread a generous spoonful of Caesar dressing in the center of the tortilla.
  4. Layer with chopped romaine lettuce, shredded rotisserie chicken, cherry tomatoes (if using), shaved Parmesan, and avocado slices. Break a Parmesan crisp into pieces and sprinkle on top for added crunch.
  5. Fold the sides of the tortilla inward, then roll up tightly from the bottom to enclose the filling. Slice the wrap in half diagonally for easier eating.
  6. Serve immediately with extra Caesar dressing on the side for dipping.
