Quiche With Hash Brown Crust
This quiche with a hash brown crust is a perfect dish to make for a special brunch or if you have weekend guests. You can switch up the veggies you add to it so it’s easily customizable.

Ingredients
- 3 cups raw shredded potatoes
- 4 tablespoons unsalted butter
- 0 salt
- 0 pepper
- 1 cup sweet Italian ground pork sausage
- 0.5 onion
- 1 tablespoon oil
- 3 handfuls baby spinach
- 6 large eggs
- 0.25 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 scallions
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon oregano
- 0.5 teaspoon garlic powder
- 0.25 teaspoon salt
- 0 pinch cayenne
Instructions
- Preheat oven to 375°F. Coat a 9-inch pie plate with non-stick cooking spray.
- In a large bowl, toss the hash browns with the melted butter to coat. Season with salt and pepper.
- Press the hash browns into the bottom and up the sides of the pie plate to form a crust. Bake for approximately 25-30 minutes or until golden brown.
- In the meantime, sauté the ground sausage in a skillet over medium-high heat, breaking it up with a wooden spoon, until no pink remains, about 5-8 minutes. Remove to a plate.
- In the same skillet, sauté the chopped onions in a tablespoon of oil until tender, about 5 minutes.
- Add the spinach to the skillet and stir until the heat of the skillet wilts the spinach. Remove from heat and let cool a bit.
- In the large bowl you used for the hash browns, whisk together the eggs, heavy cream, shredded cheddar cheese, chopped scallions, smoked paprika, oregano, garlic powder, salt, and a pinch of cayenne.
- Add the cooked sausage to the egg mixture and mix to combine.
- To the crust, add the spinach and onions, and pour the egg mixture on top of that.
- Bake for approximately 30 minutes or until set. Let cool slightly and then cut into wedges.
